Looking for something extremely flavorful? Love Seafood? Try Blackened Stuffed Salmon! I made this a few days ago for some friends of mine and it was absolutely delicious! It is always fun finding new and interesting ways to use the seasonings in the store.


To get started you’ll need the following ingredients:

 

  • 1 pound of salmon
  • Shrimp (Pre-cooked, optional)
  • 1 cup of cream cheese
  • Chopped bacon (however much you’d like)
  • 1-cup Parmesan cheese
  • 2 cups of spinach
  • 3 tablespoons of blackened seasoning* (yum!)
  • 2 tablespoons of Cajun seasoning*
  • A mixing bowl
  • A lemon wedge
  • Olive Oil (Our Lemon flavored olive oil would compliment this dish very well)
  • About twenty minutes of your time

Cut the salmon in half and pat it dry.  Season both salmon pieces front and back with the blackened seasoning. Try not to over do it. You should still be able to see some of the pink behind the seasoning. One piece of the salmon will be the top part and the other will become the bottom. Set the salmon pieces aside and begin assembling the stuffing mix. In a bowl mix cream cheese, bacon, Parmesan cheese, spinach, Shrimp (optional) and Cajun seasoning. Mix well and set aside.

Pre-heat the oven to 350 degrees and take out a 10-inch skillet and prepare it with a drizzle of oil. Place the stuffing in-between the two pieces of salmon and then place onto the skillet. Bake for 15 minutes. Take out the dish, and squeeze a lemon on top for a finishing touch. Enjoy! If you have any questions regarding this dish don’t be afraid to ask.
