Looking for something extremely flavorful? Love Seafood? Try Blackened Stuffed Salmon! I made this a few days ago for some friends of mine and it was absolutely delicious. It is always fun finding new and interesting ways to use the seasonings in the store. To get started you’ll need the following ingredients:

  • 1 pound of salmon
  • Shrimp (Pre-cooked, optional)
  • 1 cup of cream cheese
  • Chopped bacon (however much you’d like)
  • 1-cup Parmesan cheese
  • 2 cups of spinach
  • 3 tablespoons of blackened seasoning* (yum!)
  • 2 tablespoons of Cajun seasoning*
  • A mixing bowl
  • A lemon wedge
  • Olive Oil (Our Lemon flavored olive oil would compliment this dish very well)
  • About twenty minutes of your time

Cut the salmon in half and pat it dry.  Season both salmon pieces front and back with the blackened seasoning. Try not to over do it. You should still be able to see some of the pink behind the seasoning. One piece of the salmon will be the top part and the other will become the bottom. Set the salmon pieces aside and begin assembling the stuffing mix. In a bowl mix cream cheese, bacon, Parmesan cheese, spinach, Shrimp (optional) and Cajun seasoning. Mix well and set aside.

Pre-heat the oven to 350 degrees and take out a 10-inch skillet and prepare it with a drizzle of oil. Place the stuffing in-between the two pieces of salmon and then place onto the skillet. Bake for 15 minutes. Take out the dish, and squeeze a lemon on top for a finishing touch. Enjoy! If you have any questions regarding this dish don’t be afraid to ask. Applewood smoke rub is one of our most popular seasonings. It is a Smokey, savory, slightly sweet blend of spices that gives meats a fantastic, flavorful crust that seals in all the juices. It looks as delicious as it sounds. Creating it is easy. To make this delicious dish you will need the follow:

  • A boneless chicken breast
  • One scoop of applewood smoke rub. One scoop will be more than enough unless you're using more than one chicken breast.
  • A grill or stovetop 

You will start with thawing your chicken breast. To get a really good even thaw you will want to place your chicken breast in your refrigerator twenty-four hours before you plan to use it. If you do not have that much time, thaw it in water. If you thaw the chicken breast in water it must be cooked immediately afterwards. Rub the seasoning on both sides of the chicken. Cover the chicken with plastic rap and place in the refridgerator for one hour. This allows for the chicken breast to absorb all the flavor from the rub.

If using a stovetop use a non-stick pan and place the seasoned breast on medium heat. Turn occasionally. It should take about ten minutes for the chicken to fully cook. Cut inside the chicken with a knife to make sure it is done. If using a grill the same rules apply. Place the chicken on medium-heat. You'll want to carefully watch the chicken and turn it occasionally to make sure it is completely done. The chicken should have a nice brown glazed look to it.

This chicken is great when served with veggietables. I usually eat it with onions, bell peppers, zucchini, roasted tomatoes, and mushrooms. Applewood smoke rub is also great on steaks and pork chops.
